Passion Fruit Key Lime Pie
One of my absolute favorite fruits is Passion Fruit. When its season arrives, I’m always on the lookout for creative ways to incorporate it into my dishes. This recipe idea was sparked by a delightful pastry we indulged in at Tartine Manufactory yesterday. It was a pastry filled with a luscious passion fruit custard that was simply heavenly.
As I savored each bite, I couldn’t help but imagine how this wonderful flavor would complement a classic key lime pie. In my mind, I envisioned the perfect harmony between a crispy almond flour and coconut crust, the tangy notes of the curd, and the silky sweetness of the meringue topping.
So, as soon as I returned home, I embarked on a baking adventure, despite the scorching heat. San Francisco was in the midst of a relentless heatwave, and with no air conditioning, turning on the oven seemed like an irrational choice. However, my craving for this pie was too powerful to resist.
The end result was nothing short of phenomenal, and it made enduring the oven’s heat completely worthwhile! I couldn’t be more thrilled about a recipe, and I sincerely hope you enjoy it as much as my husband and I did. Stay cool and indulge in this delectable treat! 😅

Preparation & Cooking time: 60 minutes
Ingredients

- 1 Cup of Coconut Flour
- 1 Cup of Almond Flour
- 5 Eggs
- 2 or 3 Passion Fruits
- 2 Lime
- 1 Lemon
- 6 Tbs of Organic Honey infused with Vanilla from Nev
- 4 Tbs of Powdered Sugar
- 1/2 Cup of Butter
- 4 Tbs of Canola or Coconut Oil
- 1 Tsp of Salt

The recipe
- Preheat the Oven: Set your oven to 350°F.
- Prepare the Crust
- Begin by combining the flours with the salt in a medium sized bowl.
- Add your chosen oil and 1 egg
- Mix until you obtain a flaky ball of dough
- Press your dough in your chosen pan
- Cook in the oven for 12 minutes or until it is golden
- Prepare your Passion Fruit and Lime Curd:
- In a small bowl, mix the pulp of the passion fruit with the juice of 1 lime, 1 lemon and the Organic Honey infused with Vanilla from Nev.
- Separate your eggs yolk and reserve the whites in the fridge
- Add the fruit mix to the yolks and stir until everything is combined
- Set a medium pan to heat on the stove and pour your mix in.
- Add the cold butter and start stirring the mix. The butter will melt as the preparation heats. Stir until the preparation is fairly thick. It should take about 10 minutes depending on the heat you apply.
- Reserve on the side
- The Montage:
- When the crust is golden, remove from the oven and let it cool a little bit. Add the fruit curd and let it sit.
- In a side bowl, whisk the egg whites until it starts to foam
- Add the Powdered Sugar and continue whisking for 5 minutes or until the eggs create peaks.
- Scoop up the egg whites and add on top of the pie.
- Broil for a couple of minutes until the eggs colors.
- Add some coconut flakes for decoration or some lime slices
- Let is cool down before eating!
