Tcharak – Almond & Orange Blossom Honey Cookies
Back in France, we use to eat Tcharak regularly but since we moved to the US it has slipped from our culinary repertoire. When our family came to visit us a month ago, we exchanged a few recipes and she gave me her recipe for the tcharak she had been making recently.
Cookies brimming with almond paste? I’m definitely on board! This is certainly poised to become a recurring addition to our collection of recipes. Its preparation is remarkably straightforward, necessitating minimal ingredients, yet the outcome is undeniably delectable. It pairs exquisitely with a robust cup of coffee or a refreshing minty tea!
But what are Tcharak? They are also known as Cornes de Gazelles or Gazelles Horns, a traditional North African pastry. The name comes from the shape of the cookie. Corne de gazelle is often enjoyed during special occasions, festive gatherings, and celebrations. It’s not only a delicious treat but also a symbol of the rich culinary heritage of North African cuisine.

Preparation & Cooking time: 90 minutes
Ingredients

- 1 1/2 Cup of Almond Flour
- 1 Cup of All Purpose Flour
- 5 oz of soft Butter
- 1/4 Cup of Brightland’s Orange Blossom Honey
- 3 tbs of Water
- 2 Tbs of Vanilla Extract
- 1 pinch of sea salt
- Powdered Sugar

The recipe
- Begin by preparing the cookie dough. In a spacious bowl, combine the flour with 3/4 of the butter, along with the water and salt. Mix all the components together until they come together into a cohesive and smooth ball of dough. Set this dough aside in the refrigerator.
- While the dough is resting, focus on creating the filling. In a bowl of medium size, blend the almond flour with the remaining butter and Brightland’s Orange Blossom Honey. Continue to work on this mixture until it transforms into a smooth and uniform paste.
- Preheat your oven to 425F
- Retrieve the dough from the refrigerator and roll it out on a clean surface that has been lightly floured.
- Once the dough has been rolled out to a thin consistency, proceed to cut it into circles of your preferred size. Repeat this process until all the dough has been used.
- Fill each dough circle with a ball of almond filling that is about the size of a walnut. Shape the dough around the filling, either forming it into a croissant shape or a half-moon shape, and then transfer the filled pastries onto a baking sheet.
- Place your Tcharak in the preheated oven and bake for approximately 20 minutes.
- After removing the pastries from the oven, drizzle Brightland’s Orange Blossom Honey over the top of each cookie and gently roll them in powdered sugar.
