Apricot & Almond Tarte

When the shelves of my local community market are filled with ripe apricots, I find myself irresistibly drawn to creating an apricot and almond tart. It transports me back to my childhood home, where my grandparents owned orchards abundant with peaches and apricots. We would gather the fruits and transform them into delicious jams and pies. The combination of tangy apricots and delicate almonds always seemed like a match made in heaven.

This year, I decided to venture into culinary innovation. Using almond butter as a pie crust turned out to be a resounding success and will now be a staple in my tart recipes. It adds the perfect texture and imparts a delightful flavor without overpowering the tart itself.

Ingredients

  • 10 Apricots
  • 1 Cup of Coconut Flour
  • 1/2 Cup of Almond Flour
  • 1/2 Cup of Rice Flour
  • 1/2 Cup of Soft Butter
  • 1/3 Cup of Cane Sugar
  • 1/3 Cup of All Purpose Flour
  • 1/4 Cup of Almond Butter
  • 1/4 Cup of Water
  • 2 Eggs
  • 8 Tbs of The Frenchman Organic Apricot Fruit Spread

The recipe

  1. Start by preheating your oven to 350°F.
  2. In a small bowl, combine the Almond Butter and water until you achieve a smooth paste with a liquid-like consistency.
  3. Add the Coconut Flour and Rice Flour to the mixture and thoroughly mix them together. The resulting dough should have a sandy texture.
  4. Scoop the dough into a small pie pan and press it firmly at the bottom and around the edges.
  5. Bake it for 10 minutes
  6. While the dough is baking, prepare the almond batter. In a large bowl, combine the soft butter and sugar, mixing until the mixture starts to become smooth.
  7. Gradually add the eggs, almond flour, regular flour, and vanilla extract to the bowl. Whisk the ingredients together until you achieve a smooth batter.
  8. Remove the dough from the oven and spread 1 Tbs of The Frenchman organic apricot spread at the bottom and around the edges. It will help the dough caramelize.
  9. Scoop 2 large Tbs of the almond preparation into the dough.
  10. Rinse the apricots, cut them in half, remove the pits, and press each half into the almond preparation, ensuring it surrounds the apricots.
  11. Bake for 45 minutes.
  12. Serve the finished pie with a scoop of vanilla ice cream and whipped cream.
