Baked Goat Cheese with Pistachio & Cranberries
Every day, we often find ourselves wondering what to have for lunch or dinner, and we’re always on the lookout for new recipes and dishes to try. Back then, we used to stick to the same meals, making our weeks dull and uninteresting. So, I began searching for recipes in books and on the internet to spice things up.
I stumbled upon several recipes for goat cheese logs, but they never quite hit the spot for me until one day when I realized that I wanted it to be baked and enjoyed with bread. During our college days, my husband and I would often have baked goat cheese, which was an affordable and easy meal that we both enjoyed. This recipe is a more elevated version of that dish, and I hope you’ll get to savor it!

Preparation & Cooking time: 40 minutes
Ingredients


- 2 logs of fresh goat cheese
- 1 cup of unsalted pistachio
- 1 cup of dried cranberries
- Salt & Pepper
- 6 Tsp of Saffron Infused Honey from Nev

The recipe
1. Pre-heat your over at 375F
2. Cut the pistachios into small pieces, ranging from very thin to chunky. Repeat with the cranberries. You can use a food processor to grind these ingredients, but avoid over-grinding as you want to maintain some texture.
3. Take a medium to large bowl and work on the goat cheese, using a rice paddle for easy mixing. Stir the cheese until it becomes soft and smooth, although it doesn’t have to be perfectly smooth.
4. Add 4 tsp of Saffron Infused Honey from Nev and continue stirring.
5. Add the pistachios, cranberries, salt and pepper and mix everything well
6. Transfer the mixture to individual oven-safe pans or a medium oven-safe pan. Drizzle a small amount of honey on top.
7. Let it bake for 20 to 30 minutes
8. It will be ready when it starts to color evenly. Remove from the oven and let it sit 5 minutes
8. Serve with your favorite bread and Enjoy!
