Oats, Chocolate & Orange Blossom Scookies
Have you ever had a recipe that didn’t turn out as expected but ended up being a delightful surprise? Well, I certainly have, and I’ve named my latest creation “Scookies.” It all started when I tried some delicious oat cookies at a friend’s house a few weeks ago. I loved the texture and chewiness of the cookies and decided to give it a try myself.
When I started baking my own version of oat cookies, I wanted to add a twist by using orange blossom honey and chocolate chips. However, the end result was not what I had anticipated – it was something even better! The texture was a perfect balance between a cookie and a scone, both chewy and sandy. The addition of orange blossom honey added the perfect amount of sweetness, while the dark chocolate chips gave the Scookies character.
I don’t want to spoil too much, so I urge you to give this recipe a try and experience the deliciousness of Scookies for yourself. It’s amazing how sometimes our kitchen experiments turn out to be our new favorites!

Preparation & Cooking time: 90 minutes
Ingredients

- 1 1/2 Cups of All Purpose Flour
- 1 Cup of Salted Butter (at room temperature)
- 1/2 Cup of Powdered Sugar
- 2 Large eggs or 3 Small Eggs (at room temperature)
- 2 Cups of Oats
- 1 3/4 Cups of Chocolate Chips
- 8 Tbs of California Orange Blossom Honey from Brightland
- 1 Orange
- 2 Tbs of Vanilla Extract
- 1 Tsp of Baking Powder
- 1 Tsp of Flaky Salt

The recipe
1. In a small bowl, mix the flour, baking powder and flaky salt. Set aside
2. In a large bowl, beat the butter until it gets completely smooth, add the sugar little bit little.
3. Add the eggs one by one, the juice of 1 orange, the honey and the vanilla extract. Mix until you get a smooth and well combined batter.
4. Add the dry ingredients little bit little. Mix properly.
5. Add the oats to your batter. At this point you should have a pretty thick and sticky batter.
6. Cut your chocolate chips to your liking and add to the preparation.
7. Let this batter chill in the fridge for 45 minutes.
8. Once the batter has chilled, remove from the fridge, pre-heat your oven to 350F. Line baking sheets with parchment paper or silicone baking mats.
9. Scoop large portions of cookie dough. We are aiming for about 2 to 3 tablespoons of dough per cookies. You want your scookies to be big. You should be able to make about 20 cookies with this dough.
10. Cookie for 14 minutes or until the sides gets slightly golden. Do not over cook and don’t wait for them to color on top.
11. Let the scookies sit for 5 minutes before removing them from the sheets.
