Asian Style Soba Noodles

There is one thing we never fail to do during the holiday season… to eat a lot! This year didn’t fail to deliver. Our Christmas meals were massive, our family spent hours together enjoying the food we cooked. But with New Year’s coming in so quickly, we decided we wanted to eat light in between the two celebrations. I settled for an Asian style soba noodle recipe. It good for your body and taste like heaven!

Preparation & Cooking time: 30 minutes


Ingredients

  • 2 or 3 Baby Bok Choy
  • Soba Noodles
  • 1 cup of Edamame
  • 1 Cup of Broccoli Sprouts
  • 1 Cup of Shiitake Mushrooms
  • 6 Radishes
  • 1 Green onion
  • 3 Tbs of Rice Vinegar
  • 1 Tsp of Sesame Oil
  • 1/2 Cup of Soya Sauce
  • 2 Tsp of White Miso Paste
  • 2 Tsp of Tahini
  • Salt
  • Pepper
  • Sesame Seeds

The recipe

1. Bring a pot of water to boil

2. Clean all your veggies

3. Start by cutting the mushrooms and Bok Choy

Tip: I like to use baby Bok Choy so we can keep the entire leaves

4. In a heated pan, cook your mushroom a few minutes and add the Bok Choy leaves

5. Cook your noodles according to the instructions on the package

6. Add the Edamame to the veggies

7. In a small bowl, mix the rice vinegar, sesame oil, miso & tahini. Season with salt and pepper

8. When the noodles are cooked, add them to your veggies.

9Add the sauce & cook for a few minutes

10. Serve in a small bowl, and add your additional veggies

Tip: Here we used radishes, broccoli sprouts, green inion, sesame seeds but you can also add avocado, lime…
